Goat's Beard


Scientific Name: Tragopogon pratensis

Other Common Names: Noon flower, Jack-go-to-bed-at-noon

Interesting Characteristics: Goat's Beard opens its blossoms at sunrise and closes them before noon. Goat's Beard was formerly used for medicinal purposes; the juice from young plants was recommended as 'the best dissolvent of bile.' The tapering roots and young stalks of Goat's Beards have nutritious value and can be eaten as we eat parsnips or asparagus.
