St. Olaf food service takes part in 'Eat Local Challenge'

St. Olaf executive chef Peter Abrahamson is featured in a recent Star Tribune article on the "Eat Local Challenge," an annual contest among several chefs and restaurateurs. The challenge was to create a meal using only local ingredients, meaning no ingredients, with the exception of salt, could travel farther than 150 miles to go into the meal. The challenge was sponsored by Bon Appetit, which strives to promote farmer-chef partnerships.

Abrahamson, who invited farmers -- including St. Olaf's own student-run STOGROW -- to Stav Hall to meet with students and faculty members, said he views the contest as a learning opportunity. "We use the Challenge to help students understand more about what we do," he says. "This is a college, so we do what we can to foster knowledge."
