Bon Appetit features 'local lunch'

The general public was invited to participate in the "Eat Local Challenge" on Thursday, as presented by Bon Appetit, the food service of St. Olaf. The day's lunch in Stav Hall cafeteria and the Kings' Dining Room at St. Olaf, featured menu items that were created exclusively with ingredients from within 150 miles of campus (except salt). Menu items included braised beef brisket with caramelized onions; tomatoes stuffed with corn, squash and bleu cheese; and apple/squash crisp.
